  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery chopped
  • 1 medium zucchini diced
  • 1 cup green beans chopped
  • 1 can 14.5 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 can 15 oz cannellini beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 cup small pasta such as ditalini or shells
  • 2 cups fresh spinach chopped
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  • Add minced garlic, carrots, and celery. Cook for another 5 minutes until vegetables begin to soften.
  • Stir in zucchini, green beans, diced tomatoes, vegetable broth, cannellini beans, oregano, basil, and bay leaf. Bring to a boil.
  • Reduce heat and let simmer for 15 minutes, allowing flavors to meld.
  • Add pasta and cook according to package instructions until al dente, about 8-10 minutes.
  • Stir in chopped spinach and season with salt and pepper to taste. Remove bay leaf before serving.
